Setting up account in GF’s name, need help

I’m looking into multi-accounting and want to setup accounts in my girlfriends name. The problem is, she is from Spain and is going back in June. She has been living here since September at Uni with me.. does anyone have an idea as to what information I could use for proof of address going forward? Hoping to be able to use her accounts for a while. Thanks
